[Unit Project 2] How to make Japanese rolled omlet

  Tamagoyaki (Japanese rolled omlet) is one of Japan's most famous side dishes. Tamagoyaki is a thickly cooked, seasoned egg dish. In the Kanto region, the eggs are seasoned sweetly and cooked to a slightly charred state, whereas in the Kansai region, they are cooked with dashi ( Japanese soup stock ) and not burnt. Tamagoyaki  is also loved as a side dish for lunch boxes. It is also a historical side dish, with the origins of tamagoyaki dating back to the Edo period. Edo omelette is characterised by its sweet, rich flavour with the umami of bonito soup stock and its elastic texture. From the time I was in kindergarten, my mother always made me a lunch box with tamagoyaki in it. In addition, for three years in high school, Tamagoyaki were always included in my lunch box every day. My mother's tamagoyaki had the gentle taste of soup stock and warmed me up.
