Tamagoyaki (Japanese rolled omlet) is one of Japan's most famous side dishes. Tamagoyaki is a thickly cooked, seasoned egg dish. In the Kanto region, the eggs are seasoned sweetly and cooked to a slightly charred state, whereas in the Kansai region, they are cooked with dashi ( Japanese soup stock ) and not burnt. Tamagoyaki is also loved as a side dish for lunch boxes. It is also a historical side dish, with the origins of tamagoyaki dating back to the Edo period. Edo omelette is characterised by its sweet, rich flavour with the umami of bonito soup stock and its elastic texture.
From the time I was in kindergarten, my mother always made me a lunch box with tamagoyaki in it. In addition, for three years in high school, Tamagoyaki were always included in my lunch box every day. My mother's tamagoyaki had the gentle taste of soup stock and warmed me up. When I was in elementary school, I had to make tamagoyaki as part of my cooking class, and my mother taught me the recipe for tamagoyaki.
〈Ingredients〉
- 2 eggs
- 2 teaspoon sugar
- 2 teaspoon sake for cooking
- 2 teaspoon water
- 2 teaspoon vegetable oil
- 2 teaspoon white dashi (Japanese soup stock)
- 1 flying pan for Japanese rolled omlets
- 1 small bowl (anything is fine)
- 1 set of chopsticks for cooking
- 1 spatula
- First, crack the two eggs into the bowl and beat the egg whites well.
- Then add the sugar, the sake, the white dashi, and the water into the bowl and mix to make an egg mixture.
- Then heat the frying pan over medium heat and add the vegetable oil.
- When the flying pan feels warm, pour a quarter of the egg mixture from step 2 into the flying pan.
- After spreading the egg mixture on the frying pan, when the surface of the egg mixture has set, use the spatula to fold and roll it up.
- When the rolls are finished, place them at the top of the frying pan and repeat steps 4 and 5 several times until all the egg mixture has been poured.
- When all the egg mixture has been poured and rolled, turn off the heat.
- Then use the residual heat to shape the egg rolls.

Tamagoyaki (Japanese rolled omlet) have many possibilities. If there are leftovers in the fridge, such as ham or spinach, you could add them to the egg mixture to make a filling tamagoyaki. In my house, tamagoyaki with seaweed and egg rolls with Crab sticks are often made. They are very tasty and match the flavour of the eggs well. They are also good when you get a little bored with regular tamagoyaki.
